So I have decided for my health and well being to try out a vegan diet for 30 days…
First day very successful – feeling good even with a sore throat and an extra long day (only just got back from Liverpool Hope event)… normally be ordering a takeaway right now!
Breakfast: cereal with almond milk, fruit and black coffee
Dinner: avocado salad with herb wraps and mustard coriander dressing (this made Me realise I do not like salads – need pasta salad next time!)
Tea: potato wedges, houmous, crackers, salad, soya yoghurt and raspberries
Snacks: fruit, mango with sticky rice and 2 Oreos.
Hopefully be able to stick at it, need to drink more water tomorrow!
